What Is Thokku?
Thokku is a south Indian condiment made with vegetables and pickling spices. The word Mango thokku and Mango pickle are not the same and spices are also different. The mango thokku recipe and mango pickle making method is different.
A pickle is a time taking process that involves days of preparing. Thokku on the other hand is instant and it takes just 30-45 minutes. A thokku has an almost smooth consistency and texture like chutney.
Ingredients of Mango Thokku Recipe:
- 3 cups grated raw mango
- 1/2 teaspoon fenugreek seeds dry roast and powder
- 6 tablespoons sesame oil
- 1 teaspoon mustard seeds
- 1/2 teaspoon asafoetida
- 3 teaspoons chili powder adjust to taste
- 3/4 teaspoon turmeric powder
- 1/2 teaspoon jaggery
- Salt to taste
Step 1: Wash, peel and grate the mango and set it aside.
Step 2: Heat 4 or 5 tablespoons of sesame oil in a thick pan. Temper with mustard, fenugreek seeds.
Step 3: Add asafoetida and saute well. Add the grated raw mangoes and mix. Cook in medium flame for 5-10 minutes.
Step 4: Add salt, turmeric powder and chili powder. Mix well and cook till the mangoes turn mushy. It takes around 10-15 minutes in medium flame.
Step 5: Add a little bit jaggery, oil and roasted fenugreek powder. Mix it well and cook till oil leaves the sides of the mango thokku.
Step 6: Let cool it completely. Store in a clean dry bottle and serve as required.
You can serve this Mango thokku with idly, dosa, paratha, curd rice, etc.
