Avakaya biryani Recipe
Avakaya biryani is one of the most favorite recipes for all south Indians. Avakaya is made in many variations like regular Avakaya, Sesame Avakaya, Jaggery Avakaya, Ginger/Garlic Avakaya, grated mango avakaya etc. Every household is busy with making varieties of avakaya recipes in mango season.

Ingredients
- 2 cups basmati rice
- ¾th cup prepared avakaya pickle
- ¼th cup diced carrots
- ¼th cup diced potatoes
- 1/2 cup chopped onions
- 1 cinnamon
- 2-star anise
- Salt
- 2 tbsp - oil
- 4 cloves
- 1 bay leaf
Avakaya biryani in a Step-by-Step process
Step 1: Soak basmati rice for at least an hour.
Step 2: Heat in 1¼ cups of water and basmati rice in a pot to heat. Add 1 tsp salt When water starts boiling, turn the flame to low heat. Cook until all water evaporates. Turn off the stove.
Step 3: Meanwhile, heat oil in a pot. Add cinnamon, star anise and fry for 30 seconds.
Step 4: Add carrots, potatoes, onions and cook for a few minutes. Add salt Stir it well. Cook until slightly soft. Do not overcook. Then Turn off the stove and add an Avakaya and Stir it well.
Step 5: Now in another pan first add the vegetable layer. Then add a rice layer. Repeat layers till rice and vegetables are done. You can set up layers in a tray and cook in the oven at 350c.
Step 6: Close the lid tightly. Turn the stove to low heat and cook for 20 minutes or until rice is well cooked.
Step 7: Remove, mix well and Serve hot.
