Aloo paratha is a staple North Indian (especially Punjabi) breakfast.
Aloo paratha is a whole wheat paratha stuffed with flavoursome mixture of mashed potatoes, onions, green chillies and spice powders.

Ingredients for Aloo Paratha
For stuffing
3 Medium-sized Potato boiled and mashed
1/2 cup Onion -finely chopped
1 tsp green chillies -finely chopped
1/2 tsp chilli powder
1/2 tsp garam masala
1/2 tsp chat masala
2 tsp ghee
salt to taste
2 tbsp coriander-finely chopped
1/2 tsp cumin powder
For Dough
2 cups whole wheat flour
1 cup water
2 tbsp ghee - melted
salt to taste
Aloo Paratha Recipe Method
Step 1: First make the dough. Combine the whole wheat flour, water, ghee and salt. Knead into semi-tight dough. Keep aside.
Step 2: Make the stuffing. Heat a pan, add 2 tsp ghee into it. Add onion and sauté for 5 minutes. Add green chillies and sauté again. Next,add the mashed potatoes. Add chilli powder, cumin powder, garam masala, chaat masala and mix well. Finally, add some coriander leaves. Mix everything well so that no lumps are formed.
Step 3: Divide the dough into equal portions. Roll a portion into a circle (4" diameter), dusting some flour.
Step 4: Place a portion of stuffing into the rolled dough. Press lightly.
Step 5: Pull the sides of the rolled dough to the center and seal the stuffing tightly.
Step 6: Flatten the stuffed dough and start rolling again by dusting some whole wheat flour. Ensure to roll evenly so that the mixture does not come out.
Step 7: Heat a tawa and cook them on both sides. Keep the flame low. Smear 1 tsp ghee over it while cooking. Delicious aloo paratha is ready. Serve them hot.
