11 Classic Indian Mango Recipes

What's the most loved Indian fruit? Certainly, it's mangoes!

This juicy and pulpy fruit has won the heart of millions across the globe. India is largest producer of mangoes and consumes most of its own production. That explains our fondness for the fruit.

There are many varieties of mangoes available in India like chausa, neelam, alphonso, kesar, badami, dasheri, langda, safeda, totapuri etc. Everyone has their own favourite variety of mango.

From mango salads, mango lassi to juices or ever-so-delicious aamras, mango can be used to prepare various delicacies. Here we've got 11 easy Indian mango recipes for you to prepare at home.

1. Mango Chutney

It's the easiest Indian mango recipes. This tangy and tasty condiment is perfect to complement to hot rice/rotis. There are hot and sweet versions of this. Hot and spicy chutney is made by grinding raw mango with ingredients like ginger, onion, garlic, green chilly etc.

In the sweet version slightly ripe mangoes are used. Mango pieces are boiled along with cardamom, cinnamon, ginger, clove and sugar. When the mixture turns thick add chilli powder and cumin powder. Yummy sweet chutney is ready!

2. Mango Pickle

Almost every India household will have this pickle racked up on their shelves. Each region in India has a different pickle recipe that they love. Cut mango pickle, tender mango pickle, grated mango pickle, aam ka achar, andhra avakai pickle being a few of them.  Cut Mango pickle being the most common and simplest of them.

3. Mango Kulfi

How can we forget Mango Kulfi, an Indian version of mango ice cream. Kulfi needs more time to make since milk has to be cooked for a longer time. But this recipe is worth the effort because of the intense milky taste that makes it different from other ice creams. Mango pulp and spices are added to the cooked and cooled milk. This creamy and yummy mango kulfi is sure to win everyone's compliment.

4. Amrakhand

Amrakhand/Mango Shrikhand is a popular Gujarati sweet dish. The mango puree is mixed with sweetened curd(shrikhand) and flavoured with nuts. This dish is best enjoyed with puris. Homemade yogurt is the best for making amrakhand.

5. Raw Mango Rasam

You could call this Indian raw mango soup! This tangy, sweet soup is made with raw mangoes, spices , coriander leaves. It is a twist to the traditional rasam recipe, light on stomach and easy to make. This makes a great side for hot steamed rice. The Mango Rasam is the perfect blend of sweet, spicy and sour flavours, and is best served piping hot.

6. Mango Phirni

Mango Phirni or India Mango pudding is a popular North Indian sweet pudding made with mango, rice and milk. Phirni is a must in most of the festivals and weddings in North India. Ground rice granules are cooked in milk. Mango puree and sugar are added to the cooled "kheer". Garnish with cubed mangoes and nuts like pistachios and almond. Add a little saffron or rose petal for that delightful aroma.

7. Mango Lassi

Lassi, often consumed to beat the summer heat in India, is thick and smooth in consistency. Punjabi Mango lassi cools down our body and has an irresistible flavour to it. This is made by blending juicy ripe mangoes, curd, sugar, and milk. You can say, mango lassi is a milkshake or smoothie with yogurt and mango.  Optionally, finish it off with a pinch of cinnamon/cardamom powder. Garnish with dry fruits and nuts.

8. Mango Kesari

Mango kesari/halwa is made of rava and ripe mangoes. The smooth and silky kesari is the South India version of Sooji halwa.  It’s also called Mango Sheera. This  dessert can be made almost for all the occasions as it can be quickly prepared.  Semolina/Rava is added to boiling water. Once cooked blended mango puree is mixed gently. Garnish with Raisins and cashew nuts roasted in hot ghee.

9. Mango Falooda

This is quite a refreshing drink made with mango puree, chopped mangoes , falooda sev(vermicelli) and sabja seeds. There are usually two methods to prepare mango falooda. One method uses mango jelly cubes and mango custard while in the other mango puree and milk are used. in the serving glass, first some rose syrup is added. Then 2 layers of sabja seeds, falooda sev, mango puree and milk. Add a few mango cubes and a scoop of ice cream. Garnish with dry fruits. This chilled layered dessert is perfect for a hot sultry day.

10. Mango Rice

Raw Mango rice comes in different versions like Mangai sadam, Mamidikaya pulihora or mavinakayi chitranna. You can either grind or grate mango. It is almost the same as lemon rice. Instead of lemon juice, tanginess comes from mangoes in this recipe. Peanut, chana dal, mustard seeds, urad dal, dry red chilli, curry leaves, ginger paste and green chilly is sauteed in hot oil before adding grate mangoes and coconut. Finally rice is mixed gently with this to make a perfect breakfast.

11. Aamras

Aamras is fairly popular in Western India. Aam means mango and Ras means juice. Traditionally aamras is served with poori. But this can also be consumed as a dessert. Alphonso mango which is not so fibrous is generally used for making aamras. In Gujarati version dry ginger powder is added. But in Maharastrian aamras they add cardamom powder and saffron. Jaggery is added if you want very sweet aamras. You can add water/milk for the required consistency.
